Ingredients

  • 1 pound ground beef
  • 1 (15-ounce) can tomato sauce
  • 1/2 teaspoon salt plus more, to taste
  • 1/2 teaspoon ground black pepper plus more, to taste
  • 1/2 teaspoon garlic powder plus more, to taste
  • 8 ounces egg noodles
  • 1/2 cup sour cream
  • 1 cup small curd cottage cheese
  • 1 1/2 cups cheese shredded, divided into thirds
  • 1/4 cup green onions diced, plus more, to taste, for serving

Directions

  • Preheat the oven to 350 degrees F.
  • Spray a 9x13-inch casserole dish with cooking spray.
  • In a large skillet over medium heat, cook the beef, while crumbling, until it is no longer pink. Drain the excess grease.
  • Stir the tomato sauce, 1/2 teaspoon of the salt, 1/2 teaspoon of the pepper, and 1/2 teaspoon of the garlic powder into the beef. Adjust the heat to low and simmer the beef mixture for 5 minutes.
  • In a large pot of boiling water, cook the egg noodles to al dente, according to the package directions. Drain the noodles.
  • In a medium bowl, combine the sour cream, the cottage cheese, 1/3 of the shredded cheese, 1/4 cup of the green onions, the salt, the pepper, the garlic powder, and the cooked noodles and stir to combine.
  • Spread 1/2 of the noodle mixture into the bottom of the prepared casserole dish.
  • Spread 1/2 of the meat mixture over the noodle mixture and sprinkle with 1/3 of the cheese.
  • Repeat the layers with the remaining noodle mixture, the remaining meat mixture, and the remaining shredded cheese.
  • Bake the casserole until the cheese has melted, about 25 minutes.
  • Sprinkle the casserole with the green onions and serve.
