Ingredients
- 1 tablespoon olive oil
- 1 medium onion diced
- 1 green bell pepper diced
- 3/4 cup barbecue sauce
- 1 cup frozen corn kernels
- 2 cups pulled pork homemade or store-bought
- kosher salt to taste
- black pepper to taste
- 1 cup cheddar cheese grated, divided
- 1 (8.5-ounce) box corn muffin mix plus the ingredients called for on the package
Directions
- Preheat the oven to 350 degrees F.
- Lightly grease a 2-quart baking dish.
- In a large skillet or Dutch oven over medium-high heat, add the olive oil.
- Add the onions and the bell peppers to the hot oil and cook, while stirring, just until the onions are translucent and the bell peppers are tender, about 5 minutes.
- Reduce the heat to low.
- Add the barbecue sauce to the onion mixture and simmer, while stirring, until the sauce thickens slightly, about 1-2 minutes.
- Add the frozen corn and the pulled pork to the onion mixture and stir to combine.
- Taste the pork mixture for seasoning and add the salt and the black pepper, as needed.
- Add the pork mixture to the prepared baking dish and spread it out evenly.p
- Sprinkle the pork mixture evenly with 1/2 cup of the grated cheddar cheese.
- In a separate bowl, prepare the cornbread batter according to package directions.
- Add the remaining cheddar cheese to the cornbread batter and stir to combine.
- Spread the cornbread batter over the pork mixture in the baking dish.
- Bake until the crust is golden-brown and cooked through, about 30-35 minutes.
- Let the bake stand for 5-10 minutes.
- Serve.
