Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 1 green bell pepper diced
  • 3/4 cup barbecue sauce
  • 1 cup frozen corn kernels
  • 2 cups pulled pork homemade or store-bought
  • kosher salt to taste
  • black pepper to taste
  • 1 cup cheddar cheese grated, divided
  • 1 (8.5-ounce) box corn muffin mix plus the ingredients called for on the package

Directions

  • Preheat the oven to 350 degrees F.
  • Lightly grease a 2-quart baking dish.
  • In a large skillet or Dutch oven over medium-high heat, add the olive oil.
  • Add the onions and the bell peppers to the hot oil and cook, while stirring, just until the onions are translucent and the bell peppers are tender, about 5 minutes.
  • Reduce the heat to low.
  • Add the barbecue sauce to the onion mixture and simmer, while stirring, until the sauce thickens slightly, about 1-2 minutes.
  • Add the frozen corn and the pulled pork to the onion mixture and stir to combine.
  • Taste the pork mixture for seasoning and add the salt and the black pepper, as needed.
  • Add the pork mixture to the prepared baking dish and spread it out evenly.p
  • Sprinkle the pork mixture evenly with 1/2 cup of the grated cheddar cheese.
  • In a separate bowl, prepare the cornbread batter according to package directions.
  • Add the remaining cheddar cheese to the cornbread batter and stir to combine.
  • Spread the cornbread batter over the pork mixture in the baking dish.
  • Bake until the crust is golden-brown and cooked through, about 30-35 minutes.
  • Let the bake stand for 5-10 minutes.
  • Serve.
