Ingredients

  • 12 ounces spaghetti uncooked
  • 1 pound ground beef
  • 1 (1-ounce) envelope taco seasoning
  • 3/4 cup water
  • 1 (15-ounce) can black beans rinsed and drained
  • 1 (10-ounce) can tomatoes and green chiles diced, undrained
  • 2 cups Mexican cheese blend shredded, divided
  • 2/3 cup salsa

Directions

  • Preheat the oven to 350 degrees F.
  • Grease a 9x13-inch baking dish.
  • Break the spaghetti into thirds.
  • In a large pot of salted boiling water, cook the spaghetti to al dente, according to the package directions. Drain the spaghetti and set aside.
  • While the spaghetti is cooking, in a Dutch oven over medium-high heat, cook and stir the ground beef until it is browned and crumbly, about 5-7 minutes. Drain the excess grease.
  • Add the taco seasoning and the water to the ground beef, bring to a boil, then reduce heat and simmer, stirring occasionally, about 5 minutes.
  • Add the black beans, the diced tomatoes, 1 cup of the cheese, and the salsa to the ground beef mixture. Mix well and continue to simmer.
  • Add the cooked spaghetti to the ground beef mixture and toss to combine.
  • Transfer the spaghetti mixture to the prepared baking dish and bake, covered, about 20 minutes.
  • Sprinkle the spaghetti mixture with the remaining cheese and bake, uncovered, until the cheese has melted, about 3-5 minutes.
  • Let the spaghetti mixture stand for 5 minutes.
  • Plate and serve.
