Ingredients

  • 2 (1-pound about 1 1/4-inch-thick) steaks, such as New York strip, ribeye, or top sirloin
  • 1 1/2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 1/2 tablespoon vegetable oil can substitute with any high-heat cooking oil of your choice
  • 2 tablespoons unsalted butter
  • 2 cloves garlic peeled and quartered
  • 1 sprig fresh rosemary

Directions

  • Pat the steaks dry with paper towels.
  • Season the steaks with the salt and the pepper.
  • Heat a cast-iron pan until it is very hot.
  • Add the oil, swirling to coat and allowing it to become very hot.
  • Add the steaks and sear on the first side until a brown crust forms, about 4 minutes.
  • Flip and cook the steaks until a crust forms on the other side, about 3-4 minutes.
  • Turn the steaks onto each of their sides, rendering and searing the fat on the edges, about 1 minute per edge.
  • Reduce the heat to medium.
  • Immediately add the butter, the garlic, and the rosemary to the pan.
  • Baste the steaks using the melted butter, tilting the pan so the butter pools and is easy to scoop up with a spoon, and continue butter-basting the steak for about 1 minute. If you desire more doneness, leave the steaks on for longer, continuing to butter-baste the steaks as they cook.
  • Transfer the steaks to a cutting board, cover them loosely with foil, and allow them to rest, about 10 minutes.
  • Slice the steaks against the grain into 1/2-inch strips.
  • Serve drizzled with the extra butter-basting sauce.
