Ingredients
For the cube steaks:
- 1/2 cup flour
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 pound cube steaks
- 2 tablespoons olive oil
For the mushroom gravy:
- 1 tablespoon olive oil
- 1/2 onion sliced
- 6 ounces mushrooms sliced
- 1 cup beef broth
- 1 (1-ounce) envelope onion soup mix
- 1 teaspoon cornstarch
- 1 tablespoon water
- fresh chives optional, to taste, chopped, for garnish
Directions
- In a small bowl, add the flour, the black pepper, the salt, the onion powder, and the garlic powder and whisk to combine.
- Coat the cube steaks with the flour mixture.
- In a medium-sized skillet over medium-high heat, add 2 tablespoons of the olive oil.
- Add the cube steaks to the hot oil and cook until they are golden and reach an internal temperature of at least 145 degrees F for a medium doneness, about 3-4 minutes per side.
- Transfer the cube steaks to a plate.
- In the same skillet used to cook the cube steaks over medium-high heat, add the remaining olive oil.
- Add the onions to the hot oil and cook, while stirring, until softened, about 4-5 minutes.
- Add the mushrooms to the onions and cook, while stirring, until the mushrooms are tender and golden, about 4-5 minutes.
- Add the beef broth and the onion soup mix to the mushroom mixture and stir until the soup mix is dissolved.
- In a small bowl, add the cornstarch and the water and whisk until the cornstarch is completely dissolved.
- Add the slurry to the mushroom mixture and stir to combine.
- Add the cube steaks to the sauce mixture and simmer until the sauce thickens slightly, about 2-4 minutes.
- Serve garnished with the chives.
