Ingredients
- 4 chicken thighs
- 1 tablespoons olive oil
- salt to taste
- black pepper to taste
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 2 tablespoons white vinegar
- 1 teaspoon ground ginger
- 4 cloves garlic minced
Directions
- Preheat the oven to 375 degrees F.
- On a large platter, add the chicken thighs and coat them with the olive oil.
- Season the coated chicken thighs with the salt and the black pepper on both sides.
- Place the chicken in a cast-iron or oven-proof skillet and transfer the skillet to the oven.
- Roast the chicken without turning or moving it until the skin is lightly browned, about 3-5 minutes.
- While the chicken is roasting, in a medium bowl, add the soy sauce, the brown sugar, the white vinegar, the ground ginger, and the garlic and stir to combine.
- Transfer the chicken thighs from the skillet to a large plate and drain any drippings from the skillet.
- Transfer the chicken thighs back to the drained skillet, skin-side up.
- Pour the soy sauce mixture over the chicken thighs.
- Transfer the chicken back to the oven and roast, basting occasionally, until the sauce has reduced and thickened and the chicken thighs are cooked through, reading 165 degrees F when tested with a meat thermometer in its thickest part, about 25 minutes.
- Plate and serve.
