Ingredients

  • 1 (16-ounce) box rotini pasta
  • 1/2 cup red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 cup neutral-flavored oil
  • 1 (16-ounce) can black beans rinsed and drained
  • 1 cup frozen corn kernels
  • 2 tomatoes chopped
  • 1 red bell pepper diced
  • 1/2 cup black olives optional
  • 1/4 cup cilantro optional, chopped
  • 1/2 cup green onions chopped
  • 1/4 red onion chopped

Directions

  • In a large pot of salted, boiling water, cook the pasta according to package directions.
  • Rinse and drain the pasta, and set it aside.
  • In a large bowl, whisk together the vinegar, the oregano, the cumin, the pepper, and the salt, stirring to combine.
  • Whisk in the oil.
  • Add the pasta to the dressing and toss to coat.
  • Add the beans, the corn, the tomatoes, the bell pepper, the olives, the cilantro, and the onions, stirring until thoroughly combined.
  • Chill the corn salad until ready to serve!
