Ingredients
- 12 ounces fettuccine
- 1 pound shrimp peeled and deveined
- salt to taste
- pepper to taste
- paprika to taste
- 1 tablespoon oil
- 2 tablespoons butter
- 1 small onion finely chopped
- 1 clove garlic
- 1/3 cup white wine
- 2 cups heavy cream
- 1/3 cup parmesan cheese grated
Directions
- In a large pot of salted, boiling water, cook the pasta to al dente, according to the instructions on the package.
- Drain the noodles, but do not rinse them. Set the noodles aside.
- Season the shrimp with the salt, the pepper, and the paprika.
- Heat a large skillet over medium-high heat, then add the oil.
- Once the oil has heated, place the shrimp into the pan in one layer. Cook for about 1-2 minutes on each side until they reach an internal temperature of 145 degrees F.
- Place the shrimp in a separate bowl and set it aside.
- Using the same pan, add the butter and the chopped onions. Sauté until the onions look golden-brown, about 6 minutes.
- Add the garlic and cook, while stirring, until fragrant, about 1 minute.
- Stir in the white wine and reduce until about 1/4 of the mixture remains, scraping the brown bits off of the bottom of the pan.
- Stir in the heavy cream and allow it to simmer for 2 minutes.
- Sprinkle the parmesan into the sauce mixture.
- Stir the sauce mixture until it is creamy and smooth, then remove from the heat.
- Add in the paprika, more of the salt, and more of the pepper, as needed.
- Stir in the cooked shrimp and noodles.
- Serve.
