Ingredients
- 2 cups water
- 1 cup celery ribs chopped
- 7 tablespoons butter divided
- 1/4 cup dried minced onion
- 6 cups seasoned stuffing cubes
- 1 tablespoon canola oil
- 6 (7-ounce) pork loin chops bone-in
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 medium tart apples thinly sliced
- 1/4 cup brown sugar packed
- 1/8 teaspoon pumpkin pie spice
Directions
- Preheat the oven to 350 degrees F.
- Grease a 9x13-inch baking dish.
- In a large saucepan over medium-high heat, add the water, the celery, 6 tablespoons of the butter, and the dried minced onion and stir to combine.
- Bring the mixture to a boil.
- Stir the stuffing cubes into the celery mixture.
- Transfer the stuffing mixture to a wire rack to allow the excess liquid to drip off.
- Spoon the stuffing mixture into the bottom of the prepared baking dish.
- In a large skillet over medium heat, add the canola oil.
- Add the pork loin chops to the oil and brown both sides, about 1-3 minutes per side.
- Transfer the pork loin chops to the top of the stuffing mixture in the baking dish.
- Evenly sprinkle the pork loin mixture with the salt and the black pepper.
- In a medium bowl, add the sliced apples, the brown sugar, and the pumpkin pie spice and toss to combine.
- Pour the apple mixture over the pork loin mixture.
- Dot the remaining butter on the top of the pork loin mixture.
- Bake the pork loin mixture, uncovered, until the pork loin chops are cooked through and reach an internal temperature of 145 degrees F, about 25-30 minutes.
- Transfer the baked pork loin mixture to a wire rack and let stand, about 5 minutes.
- Plate and serve.
