Ingredients
- 4 ripe pears cored and sliced
- 5 ounces prosciutto
- 1 (8-ounce) package burrata drained and torn into large chunks
- 1/3 cup pomegranate arils
- 1/3 cup fresh mint chopped
- 1/4 cup pistachios chopped
- 3 tablespoons extra-virgin olive oil
- 1 1/2 tablespoons rice vinegar
- 1 tablespoon pomegranate molasses can substitute honey or balsamic glaze
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Directions
- On a platter, add the pear slices and arrange them in an even layer.
- Top the pear slices evenly with the prosciutto.
- Add the burrata on top of the prosciutto.
- Sprinkle the salad with the pomegranate arils, the mint, and the pistachios.
- In a small bowl, add the olive oil, the rice vinegar, the pomegranate molasses, the salt, and the pepper and whisk to combine.
- Drizzle the dressing mixture over the salad.
- Serve.
