Ingredients

  • 1/2 cup margarine plus more for cooking the beef
  • 1 pound lean ground beef
  • 1 cup yellow onion diced
  • 1 cup corn and black bean salsa
  • 1/2 cup chili sauce
  • 1 ounce taco seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon onion powder
  • 1 bunch green onions chopped
  • 12 slices bread
  • 4 cups mozzarella and cheddar cheese blend shredded

Directions

  • Preheat the oven to 400 degrees F.
  • Grease a 9x13-inch baking dish.
  • In a large sauté pan over medium-high heat, heat a little of the margarine.
  • Add the ground beef and the onions to the margarine and cook, breaking the beef up as it cooks, until it is no longer pink, about 5-7 minutes.
  • Drain the grease from the pan and reduce the heat to medium-low.
  • Add the salsa, the chili sauce, the taco seasoning, the salt, the pepper, the garlic powder, and the onion powder to the meat mixture and stir until all the ground beef is coated in the sauce.
  • Add the green onions to the meat mixture and stir well.
  • Turn off the heat.
  • Evenly divide and spread 1/2 cup of the margarine on each of the bread slices.
  • Cut the bread slices in half.
  • Place 1/2 of the bread slices, margarine-side down, in the prepared baking dish.
  • Sprinkle 2 cups of the cheese on top of the bread layer.
  • Evenly spread the meat layer on top of the cheese layer.
  • Sprinkle the remaining cheese on top of the meat layer.
  • Place the remaining bread pieces, margarine-side up, on top of the casserole.
  • Bake the casserole until the top is golden-brown, about 20-24 minutes.
  • Serve immediately.
