Ingredients

  • olive oil to taste, for greasing the grill grates
  • 1 pound ground beef chuck
  • kosher salt to taste
  • freshly ground black pepper to taste
  • 4 slices yellow American cheese
  • 4 sesame seed hamburger buns
  • 4 tablespoons mayonnaise
  • 4 tablespoons ketchup
  • 1 cup iceberg lettuce shredded
  • 1 small onion thinly sliced
  • 16 crinkle-cut dill pickles
  • 8 slices ripe beefsteak tomato

Directions

  • Prepare a charcoal grill for direct and indirect heat.
  • Preheat the grill to medium heat, clean the grates, and coat them with the oil.
  • Evenly divide the beef into 4 portions.
  • Roll the beef portions into even balls, then press them into thin, even patties with a diameter that is about 1/2 inch wider than the diameter of the hamburger buns.
  • Generously and evenly season the patties with the salt and the pepper.
  • Place the seasoned patties on the direct-heat-portion of the grill, cover the grill, and cook until grill marks appear on them, about 2 minutes.
  • Rotate the patties 90 degrees and cook until they reach an internal temperature of at least 135 degrees F for medium-rare, are well-charred on the bottom, and the juices are beginning to bubble up through to the top, about 2 minutes.
  • Carefully flip the patties and top each with 1 slice of the cheese. Immediately transfer them to the indirect-heat-portion of the grill.
  • Place the hamburger buns on the direct-heat-portion of the grill until they are slightly browned. Transfer them to a serving platter.
  • Spread 1/2 tablespoon of the mayonnaise and 1/2 tablespoon the ketchup on the inside of each of the top and the bottom toasted hamburger buns.
  • Transfer the patties to the direct-heat-portion of the grill and heat, about 30 seconds.
  • Place 1 of the cooked patties onto each of the toasted bottom hamburger buns.
  • Evenly top the cooked patties with the lettuce, the onions, the pickles, the tomatoes, and the toasted top hamburger buns.
  • Serve immediately.
