Ingredients

For the sauce:

  • 1/4 cup brown sugar packed
  • 1 teaspoon fresh ginger grated
  • 2 cloves garlic minced
  • 3 tablespoons mirin
  • 2 tablespoons soy sauce
  • 1 teaspoon rice wine vinegar or apple cider vinegar
  • 1/2 cup beef broth or chicken broth
  • 1 tablespoon cornstarch

For the bowls:

  • 1 pound lean ground beef
  • 1/3 cup scallions chopped
  • 1 red bell pepper chopped
  • 1/2 cup carrots cut into thin matchsticks
  • salt to taste
  • black pepper to taste

Optional, for serving:

  • white rice to taste, cooked and hot
  • sesame seeds to taste
  • scallions to taste, chopped

Directions

  • In a bowl, add the brown sugar, the fresh ginger, the garlic, the mirin, the soy sauce, the vinegar, the broth, and the cornstarch and whisk to combine. Set the sauce mixture aside.
  • In a skillet over medium-high heat, add the ground beef and cook, while crumbling, until it is no longer pink, about 5-7 minutes.
  • Drain the excess fat from the skillet.
  • Add 1/3 cup of the scallions, the bell peppers, and the carrots to the beef and cook, while stirring, until the veggies softened slightly, about 3 minutes.
  • Add the sauce mixture to the beef mixture and cook, while stirring, until the sauce thickens and the vegetables become tender-crisp, about 3 minutes.
  • Taste the sauce mixture for seasoning and add the salt and the black pepper, as needed.
  • Plate the beef mixture over the hot rice.
  • Garnish with the sesame seeds and the extra scallions and serve.
