Ingredients
For the apple cider vinegar dressing:
- 1 tablespoon maple syrup
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1/8 teaspoon ground ginger
- 1/8 teaspoon kosher salt
- 6 tablespoons extra virgin olive oil
For the salad:
- 6 cups mixed greens
- 1 cup pomegranate seeds
- 1 shallot thinly sliced
- 1 Granny Smith apple thinly sliced
- 1/2 cup pecans toasted or glazed
- 2 ounces goat cheese optional, crumbled
Directions
- In a medium bowl, whisk the maple syrup, the apple cider vinegar, the Dijon mustard, the ground ginger, and the salt together.
- Slowly whisk in the olive oil, 1 tablespoon at a time, until an emulsion forms and the dressing is fully combined. Set it aside.
- Place the mixed greens in a salad bowl or on a serving platter.
- Top with the pomegranate seeds, the shallots, the apples, the pecans, and the goat cheese.
- Drizzle on the apple cider vinegar dressing and toss to coat evenly.
- Serve.
