Ingredients

For the nachos:

  • 1 pound ground beef
  • 1 small onion chopped
  • 1 (16-ounce) can refried beans
  • 1 (16-ounce) jar salsa
  • 1 (6-ounce) can pitted ripe olives chopped
  • 1/2 cup cheddar cheese shredded
  • 1 green onion chopped
  • 2 tablespoons chili powder
  • 1 teaspoon salt
  • tortilla chips to taste

Optional toppings:

  • ripe olives to taste, sliced
  • green onions to taste, chopped
  • tomatoes to taste, diced

Directions

  • In a large skillet over medium heat, cook the beef and the onion, while breaking up the meat, until the beef is no longer pink, about 5-7 minutes. Drain the excess grease.
  • Stir the beans, the salsa, 1 can of the olives, the cheese, 1 of the green onions, the chili powder, and the salt into the beef mixture and cook until it is heated through, about 5-7 minutes.
  • Serve the beef mixture over the tortilla chips topped with the remaining olives, the remaining onions, and the tomatoes.
