Ingredients

For the apples:

  • 2/3 cup apples optionally peeled, diced
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • 1 tablespoon coconut oil
  • 1 tablespoon water

For the oatmeal:

  • 1/2 cup water plus more, to taste
  • 1/2 cup quick-cooking oats
  • 1 tablespoon coconut cream

Directions

  • In a small cooking pot over medium heat, add the apples, the cinnamon, the vanilla, and 1 tablespoon of the coconut oil and cook, while stirring, until completely combined and the apples are beginning to soften, about 2-3 minutes.
  • Add 1 tablespoon of the water to the apple mixture and cook, while stirring, until the apples have completely softened, about 2-3 minutes.
  • Transfer the apple mixture to a plate.
  • In the same pot over medium-high heat, add 1/2 cup of the water and the oats, adding more of the extra water as needed to ensure the oats are just covered.
  • Cook the oat mixture until the oats start to soften, about 2-3 minutes.
  • Add the coconut cream to the oat mixture and cook, while stirring, until the oats are cooked through and have absorbed most of the liquid, about 2-3 minutes.
  • Transfer the oatmeal to a bowl.
  • Top the oatmeal with the apple mixture.
  • Serve.
