Ingredients

For the fajita seasoning:

  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • salt to taste
  • pepper to taste
  • 1–1 1/2 pounds chicken breasts boneless, skinless, and cut into small thin strips
  • 1 lime juiced
  • 2 tablespoons olive oil divided
  • 2 green bell peppers cored and thinly sliced
  • 1 medium red onion thinly sliced
  • small flour or corn tortillas for serving

Directions

  • Combine all of the cumin, chili powder, garlic powder, onion powder, paprika, salt, and pepper together in a small bowl, reserving 1/2 teaspoon to be used while cooking the bell pepper and onion and the remaining seasonings for the chicken.
  • In a large bowl, toss the chicken with the lime juice and the fajita seasoning.
  • In a large cast-iron skillet, heat 1 tablespoon of the oil over medium-low heat.
  • Add the peppers, onions, and reserved 1/2 teaspoon of the fajita seasoning.
  • Cook until tender and slightly charred, about 5-7 minutes.
  • Transfer the veggies to a plate and set them aside.
  • Add the remaining 1 tablespoon of the olive oil to the same skillet and turn up the heat to medium.
  • Cook the seasoned chicken until golden on the outside and fully cooked through, reading 165 degrees F when checked with a meat thermometer, about 5 to 7 minutes.
  • Return the bell peppers and onions back to the skillet once the chicken is fully cooked to heat everything through.
  • Serve immediately with tortillas and desired toppings.
