- 2 large chicken breasts boneless, skinless
- vegetable oil for pan-frying
- 1/3 cup lemon juice
- 1 1/2 cups seasoned breadcrumbs
- lemon pepper to taste
Directions
- Slice the breasts in half, resulting in 4 thin chicken pieces.
- Place a foot of plastic wrap on the counter and lay the chicken on top.
- Cover the chicken with an additional piece of plastic wrap.
- Pound the meat until the breasts are about 1/4-inch thick.
- In a large pan, heat 1/4-inch of the vegetable oil over medium heat.
- Squeeze the lemon juice into a shallow bowl.
- In another shallow bowl, add the breadcrumbs.
- Place each piece of the chicken in the lemon juice and allow it to sit for at least 2 minutes, flipping it halfway through its soak.
- Prepare the chicken by allowing each piece to sit in the lemon juice for 2 minutes, flipping the chicken halfway through.
