Ingredients
- 1 (1-pound) smoked sausage sliced into 1/2-inch pieces
- 4 medium potatoes peeled and cubed
- 1 small onion chopped
- 1 bell pepper any color, chopped
- 1/4 cup water
- fresh parsley optional, to taste, chopped, for garnish
Directions
- In a large pot over medium heat, add the sausage, the potatoes, the onions, the bell peppers, and the water and stir to combine.
- Cover the pot and allow the sausage mixture to simmer, while stirring occasionally, until the potatoes are soft, about 15-25 minutes.
- Garnish with the parsley and serve.
