Ingredients
- 1 (1.5-pound) bag Yukon gold yellow potatoes
- 1/2 cup ranch dressing divided
- salt to taste
- pepper to taste
- 2 pounds chicken breasts skinless and boneless, cut into 1-inch cubes
- 1 cup bacon cooked and crumbled
- 2 cups Mexican cheese blend shredded
- 1/2 cup green onion diced
Directions
- Preheat the oven to 450 degrees F.
- Grease a 9x13-inch baking dish with oil spray.
- In a large bowl, mix the potatoes with the ranch and season them with the salt and the pepper.
- Transfer the potatoes to the prepared baking dish.
- Bake, stirring halfway through, until the potatoes are cooked through.
- While the potatoes are cooking, mix the chicken with the remaining ranch and allow it to marinate until the potatoes are finished.
- Place the marinated chicken on top of the baked potatoes and cover with foil.
- Bake until the chicken reaches 165 degrees F internally, about 20 minutes.
- Top the cooked chicken with the bacon, the cheese, and the green onions.
- Bake, uncovered, until the cheese has melted and is bubbly, about 10 minutes.
