Ingredients

  • 1 pound ground pork breakfast sausage
  • 1 cup yellow onion diced
  • 4 cups frozen diced hash brown potatoes
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon onion powder
  • 2 cups buttermilk pancake mix
  • 1 1/2 cups water
  • 1 teaspoon maple extract

Directions

  • Preheat the oven to 375 degrees F.
  • Grease a 9x13-inch baking dish.
  • In a large sauté pan over medium-high heat, add the sausage and the onion.
  • Crumble the sausage and cook until the onion is translucent and softened and the sausage is browned, about 5-7 minutes.
  • Add the hash brown potatoes, the salt, the pepper, and the onion powder to the pan, stirring well and cooking until the hash browns have mostly thawed, about 3 minutes.
  • Pour the mixture into the prepared baking dish, spreading it out evenly.
  • In a medium mixing bowl, combine the pancake mix, the water, and the maple extract, whisking until no large lumps remain (smaller lumps are okay and encouraged).
  • Pour the pancake batter over the potato and sausage mixture in the baking dish.
  • Bake the casserole until the pancake layer is golden brown across the top, about 36-40 minutes.
  • Serve!
