Move over, breakfast burritos! AM Quesadillas are here to revitalize the Tex-Mex morning! Crispy, golden tortillas envelop fluffy eggs, melted cheese, and bright green peppers with the fantastic crunch of crumbled bacon... now that's just heavenly! Take AM Quesadillas on the go for a quick but filling wake-up or enjoy them in comfort with some sour cream... either way, the morning is yours!

Ingredients

6 eggs
1/4 cup milk
salt to taste
pepper to taste
1/2 green pepper diced
4 tablespoons unsalted butter divided
6 medium soft tortilla shells
3/4 cup cheddar cheese shredded, divided
6 slices bacon cooked and roughly chopped
sour cream optional, to taste, for serving

Directions

In a medium bowl, add the eggs, the milk, the salt, and the pepper, and whisk to combine
Add the green peppers and stir to combine.
In a large skillet over medium heat, melt 2 tablespoons of the butter over medium heat.
Add the egg mixture to the melted butter and cook, stirring often, until no longer runny, about 4-5 minutes.
Transfer the egg mixture to a clean plate.
In the same skillet over medium heat, melt the remaining butter.
Place 1 of the tortilla shells in the middle of the pan and top it with 1/4 cup of the cheese leaving a 1/2-inch border around the edges.
Spread about 1/3 of the egg mixture and 1/3 of the bacon in even layers on top of the cheese on the tortilla.
Place another tortilla shell on top of the bacon layer and lightly press down.
Heat the quesadilla, flipping once until the shell is slightly golden and the cheese is melted, about 2-3 minutes per side.
Transfer the cooked quesadilla to a plate and repeat the process with the remaining tortilla shells, the remaining cheese, the remaining eggs, and the remaining bacon.
Serve with the sour cream.
