Ingredients
- 3 tablespoons grapeseed oil divided
- 3 eggs beaten
- 6 cups jasmine rice cooked, preferably day-old
- 3 tablespoons soy sauce
- 2 teaspoons sesame oil
- salt to taste
- black pepper to taste
- 1 cup ham cooked and diced
- 3/4 cup frozen corn optional
- 1/3 cup frozen peas
- 2 tablespoons unsalted butter
- 2 green onions thinly sliced
Directions
- In a wok or a large skillet over medium heat, add 1 tablespoon of the grapeseed oil and heat while swirling the pan.
- Add the beaten eggs to the hot oil and cook undisturbed until they are just set, about 2-3 minutes.
- Keeping the eggs together as a single patty, flip and cook the reverse side until it is cooked through, about 1 minute.
- Transfer the egg patty from the skillet to a plate to cool slightly.
- Cut the egg patty into bite-sized pieces.
- In the same wok over medium heat, add the remaining grapeseed oil.
- Add the rice and cook, while stirring, until the rice is coated in the hot oil, about 2 minutes.
- Add the soy sauce and the sesame oil to the rice and stir to combine.
- Season the rice mixture with the salt and the black pepper.
- Increase the heat to medium-high.
- Cook the rice mixture, while stirring occasionally, until the rice is completely heated through, about 5-8 minutes.
- Add the ham, the corn, and the peas to the rice mixture and cook, while stirring occasionally, until warmed through, about 3-4 minutes.
- Reduce the heat to medium-low.
- Add the butter to the rice mixture and cook, while stirring to combine, until melted and thoroughly combined.
- Add the egg pieces and the green onions to the rice mixture and stir gently to combine.
- Taste the fried rice for seasoning and add more of the salt and more of the black pepper, as needed.
- Serve immediately.
