Ingredients

For the salad:

1 (16-ounce) package spaghetti cooked and cooled
2 1/4 cups tri-color coleslaw mix
5 medium carrots shredded
1 bunch green onions white and light green parts only, chopped
1 small bunch cilantro chopped
1/4 cup sesame seeds
1 cup dry-roasted salted peanuts

For the dressing:

1/4 heaping cup creamy peanut butter
1/2 cup seasoned rice vinegar
1/4 teaspoon garlic powder
1/4 teaspoon sriracha sauce
salt to taste
1/4 cup vegetable oil

Optional, for garnish:

sesame seeds to taste
dry-roasted salted peanuts to taste
fresh cilantro to taste, sliced thinly

Directions

In a bowl, add the spaghetti, the coleslaw mix, the carrots, the green onions, 1 bunch of the cilantro, 1/4 cup of the sesame seeds, and 1 cup of the peanuts and toss well to combine.
