Ingredients
- 1 1/4 cups large egg whites from about 9
- 1 1/2 cups sugar divided
- 1 cup cake flour
- 1 1/4 teaspoons cream of tartar
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1/4 teaspoon salt
Directions
- Allow the egg whites to stand at room temperature in a bowl for 30 minutes.
- Arrange the oven rack in the lowest position. Preheat the oven to 350 degrees F.
- Using your sifter, combine 1/2 cup of the sugar and the flour together. Set aside for later.
- Add the cream of tartar, vanilla, almond extract, and salt to the egg whites.
- Beat the egg whites with a hand mixer or with a stand mixer until soft peaks form.
- Gradually add in the remaining 1 cup of the sugar, a couple of tablespoons at a time. Continue beating until stiff peaks form.
- Gently and gradually fold in the flour mixture, 1/2 cup at a time.
- Spoon the batter into an ungreased tube pan.
- Bake until it’s slightly golden and the top is dry, about 35-40 minutes.
- Remove the pan from the oven and immediately invert.
- Allow your cake to cool completely.
- Add toppings of your choice and serve!
