Ingredients
- 1 tablespoon olive oil
- 1 pound chicken breast boneless and skinless, cut into bite-size pieces
- 2 cloves garlic minced
- 1 (14.5-ounce) can diced tomatoes
- 14 ounces spaghetti sauce
- 2 ounces cream cheese
- 1 (9-ounce) package fresh spinach leaves chopped
- 1 1/2 cups multigrain penne pasta cooked
- 1 cup mozzarella cheese shredded
- 2 tablespoons parmesan cheese grated
Directions
- Preheat the oven to 375 degrees F.
- Over medium-high heat in a large skillet, heat the oil.
- Add the chicken pieces to the oil and cook until both sides are browned, about 3-5 minutes. It's okay for them not to be cooked all the way through at this point.
- Transfer the chicken pieces from the pan.
- Add the garlic to the skillet and cook until fragrant, about 1 minute.
- Add the diced tomatoes and the spaghetti sauce to the garlic.
- Add the cream cheese to the sauce mixture and stir until it melts into the sauce.
- Add the spinach to the sauce mixture and stir to incorporate.
- Add the chicken and the pasta to the sauce and stir to combine.
- Spoon the pasta mixture into a 2-quart casserole dish or an 8-inch baking dish.
- Top the pasta mixture with the mozzarella and the parmesan.
- Bake the pasta mixture until the chicken pieces reach an internal temperature of 165 degrees F, about 20 minutes.
- Serve.
