These soft and crumbly muffins are filled with hints of sweet brown sugar, rich cinnamon, and tart apple. Ingredients

For the oat topping:

  • 1/4 cup quick-cooking oats
  • 1 tablespoon brown sugar
  • 1 tablespoon butter melted
  • 1/4 teaspoon ground cinnamon

For the muffins:

  • 1 1/2 cups quick-cooking oats
  • 1 1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1 large egg lightly beaten
  • 1 teaspoon vanilla extract
  • 1 apple peeled, cored, and chopped

Directions

  • Preheat the oven to 400 degrees F.
  • Grease a 12-cup muffin pan or line the cups with paper liners.
  • In a small bowl, mix 1/4 cup of the oats, 1 tablespoon of the brown sugar, the melted butter, and 1/4 teaspoon of the cinnamon together.
  • In a large bowl, whisk the remaining oats, the flour, the remaining brown sugar, the remaining cinnamon, the baking powder, the baking soda, and the salt together.
  • In a medium bowl, whisk the applesauce, the milk, the oil, the egg, and the vanilla extract together.
  • Stir the applesauce mixture into the flour mixture until all the ingredients are moistened.
  • Fold the apple into the batter.
  • Spoon the batter into the prepared cups until they are about 2/3 of the way full.
  • Sprinkle the batter with the oat topping.
  • Bake the muffins until a toothpick inserted near the center comes out clean, about 15 minutes.
  • Serve warm.
