Ingredients
- 1 (18-ounce) jar pizza sauce
- 8 ounces cream cheese softened
- 1 cup plain Greek yogurt or sour cream
- 8 lasagna noodles cooked to al dente
- 1 package pepperoni slices divided
- 1 1/2-2 cups Italian blend cheese shredded
- fresh parsley optional, to taste
Directions
- Preheat the oven to 350 degrees F.
- Lightly grease a 9x13-inch baking dish.
- Spread 1 cup of the pizza sauce evenly in the bottom of the prepared dish.
- In a medium bowl, cream the cream cheese and the yogurt together until smooth.
- On a clean, flat surface, lay out the cooked lasagna noodles.
- Use a rubber spatula or the back of a spoon to spread the cream cheese mixture over the tops of each lasagna noodle.
- Top each of the cream-cheese-covered lasagna noodles with 6-8 of the pepperoni slices.
- Gently roll up each of the pepperoni-topped noodles, as tightly as possible without ripping, and place them in a single layer in the prepared baking dish.
- Cover the rolled noodles with the remaining pizza sauce, sprinkle with the cheese, and top with 1-2 of the pepperoni slices.
- Bake until the cheese is completely melted, about 15-20 minutes.
- Sprinkle with the parsley and serve.
