Ingredients
- 8 slices bacon
- 1 (16-ounce) package frozen hash browns
- 8 large eggs
- 1/3 cup milk
- 4 tablespoons butter
- kosher salt to taste
- freshly ground black pepper to taste
- 4 large flour tortillas
- 1/2 cup cheddar shredded
- 1 ripe avocado sliced
- hot sauce to taste, for serving
Directions
- In a large skillet over medium heat, cook the bacon until crispy.
- Drain the bacon on a paper-towel-lined plate and pour off half the fat from the skillet.
- Cook the hash browns in the bacon fat according to the package directions. Transfer to a plate.
- In a medium bowl, whisk the eggs and the milk together.
- Carefully wipe out the skillet and place it over medium heat.
- Add the butter to the skillet and melt until it just starts to foam.
- Reduce the heat to medium-low, add the egg mixture to the butter, and cook, while stirring occasionally with a rubber spatula, until soft curds form.
- Season the eggs with the salt and the pepper.
- In the center of the tortillas, layer the hash browns, the eggs, the cheese, 2 slices of the bacon, and the sliced avocado.
- Fold the two sides of the tortillas in and roll them up tightly.
- Serve the burritos with the hot sauce.
