Ingredients
- 6 slices bacon
- 2 cups flour
- 2 teaspoons baking powder
- 2 tablespoons sugar
- 3/4 teaspoon salt
- 1 egg beaten
- 1 cup milk
- 2 tablespoons oil
Directions
- Preheat the oven to 400 degrees F.
- Grease 12 muffin cups.
- Cook the bacon in a pan over medium heat until crisp.
- Chop the bacon into small pieces.
- Mix together the flour, the baking powder, the sugar, and the salt in a small bowl.
- In a separate bowl, mix the beaten egg, the milk, and the oil.
- Add the wet ingredient mixture to the dry ingredients along with the chopped bacon until just combined, careful not to overmix. The mixture should look somewhat lumpy.
- Fill each of the prepared muffin cups about 2/3 of the way full with the batter.
- Bake for 25 minutes.
