Ingredients
- 8 slices bacon halved
- 16 large shrimp peeled except for the tail and deveined
- 1 tablespoon olive oil
- 1/4 teaspoon fine sea salt or 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper freshly ground
Directions
- Preheat the oven to 425 degrees. Prepare a baking sheet by placing an oven-safe rack on it.
- Arrange the bacon, leaving space around each slice, on the rack and bake for 5-10 minutes. The bacon should be partially cooked only and still be flexible when you remove it. The length of time it will need to cook depends on the thickness of the bacon.
- In a medium bowl, add the cleaned shrimp, olive oil, salt, and pepper.
- Toss or stir to thoroughly coat the shrimp with the oil mixture.
- Remove the partially cooked bacon slices from the oven and allow them to cool until they are cool enough to handle, about 5 minutes.
- Wrap each slice of bacon around one raw shrimp, securing the bacon with a toothpick.
- Repeat until all of the shrimp are wrapped with the bacon.
- Return the bacon-wrapped shrimp to the oven-safe rack.
- Bake 10 minutes more or until shrimp are pink and the bacon is cooked through.
- Remove from the oven and serve warm.
