Ingredients
- 2 large chicken breasts
- salt to taste
- pepper to taste
- 1 cup panko bread crumbs
- 1/2 cup parmesan cheese grated
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 egg
- 1 cup marinara sauce
- 1 1/2 cups mozzarella shredded
- 2 tablespoon parsley optional minced, for garnish
Directions
- Preheat the oven to 400 degrees F.
- Ensure your oven rack is positioned in the space second from the top.
- Line a large baking sheet with aluminum foil.
- Cut the chicken breasts in half lengthwise. Try to cut them to about the same size.
- Pound the chicken with a meat tenderizer so that they are all evenly thick.
- Generously season the chicken with salt and pepper.
- In a mixing bowl or on a rimmed plate, combine the bread crumbs, parmesan, oregano, garlic powder, kosher salt, and black pepper.
- Whisk the egg in a separate dish.
- Dip a chicken breast in the egg and then into the bread crumb mixture.
- Once completely coated, place each chicken piece on the baking sheet.
- Repeat these steps with the rest of the chicken.
- Bake the chicken until it reaches an internal temperature of 165 degrees F, about 15 minutes.
- Remove the chicken from the oven and flip each piece over.
- Pour the marinara sauce over the chicken and top with the mozzarella cheese.
- Place the chicken back in the oven to broil on high until the chicken is golden and crisp, and the cheese starts to bubble, about 3-4 minutes. Watch carefully so that it doesn't burn.
- Remove the chicken from the oven and serve immediately.
