Ingredients

  • 8 ounces farfalle pasta
  • 8 ounces fresh baby spinach washed
  • 1 cup whole-milk ricotta
  • 1 tablespoon extra-virgin olive oil
  • 1/3 cup parmesan cheese grated, plus more, to taste, for serving
  • 1 clove garlic grated or pressed
  • 1 lemon zested and juiced
  • salt to taste
  • black pepper to taste
  • lemon wedges optional, to taste, for serving

Directions

  • In a large pot of salted, boiling water, add the pasta and cook it to al dente, according to the package directions.
  • During the last minute of the pasta cooking time, reserve 1/2 cup of the cooking water, then add the spinach to the boiling water and stir well, making sure to submerge the leaves.
  • Drain the pasta and the spinach and return them to the same pot.
  • In a medium bowl, add the ricotta, the olive oil, 1/3 cup of the parmesan cheese, the garlic, the lemon zest, and the lemon juice and stir to combine.
  • Season the ricotta mixture with the salt and the pepper.
  • Add the ricotta mixture and about 1/4 cup of the reserved pasta water to the pasta mixture and stir well to evenly coat the pasta. If the sauce seems too thick, add the remaining pasta water, a little at a time, until it is smooth and creamy.
  • Serve with the extra parmesan and the lemon wedges.
