Ingredients

1 tablespoon canola oil
1 1/2 pounds ground sirloin
1/2 medium red onion diced
1 (15-ounce) can fire-roasted tomatoes diced
1 (15-ounce) can pinto beans drained and rinsed
1 (1-ounce) package taco seasoning
1/2 cup water
9 (8-inch) corn tortillas
3 cups cheddar cheese shredded

Directions

Preheat the oven to 400 degrees F.
In a large skillet over high heat, add the oil and the sirloin and cook, while crumbling the meat, until it is no longer pink, about 5-7 minutes.
Add the onion to the sirloin and cook, stirring often, until it has softened, about 5 minutes.
Stir the tomatoes, the pinto beans, the taco seasoning, and the water into the sirloin mixture and bring it to a boil.
Reduce the heat to medium and simmer the sirloin mixture, stirring often, until it has slightly reduced, about 3 minutes.
Transfer the sirloin mixture from the heat.
In a dry skillet over high heat, warm the tortillas, about 15 seconds per side.
Place 3 of the warmed tortillas at the bottom of an 8-inch square baking dish.
Top the tortillas with 2 cups of the sirloin mixture.
Sprinkle the sirloin layer with 1/2 cup of the cheese.
Repeat the layers twice ending with the cheese.
Bake the casserole, uncovered, until the cheese has melted and is heated through, about 8 minutes.
Serve.
