Ingredients
- 2 tablespoons butter
- 3 cups potatoes peeled and cut into wedges
- 1 cup carrots peeled and cut into 1/4-inch slices
- 1/2 cup celery diced
- 1/2 cup onions coarsely chopped
- 1/2 teaspoon fresh garlic finely chopped
- 2 cups leftover roast beef cut into 3/4-inch cubes
- 1/2 cup water
- 1/4 cup ketchup
- 1/4 cup fresh parsley chopped
- 2 tablespoons Worcestershire sauce
- 1/2 teaspoon instant beef bouillon
- 1/2 teaspoon black pepper
- 1 cup cheddar cheese shredded
Directions
- Preheat the oven to 375 degrees F.
- In a 12-inch skillet over medium heat, melt the butter until it sizzles.
- Add the potatoes, the carrots, the celery, the onions, and the garlic to the melted butter and cook, while stirring occasionally, until the vegetables have softened, about 6-8 minutes.
- Add the roast beef pieces, the water, the ketchup, the parsley, the Worcestershire sauce, the beef bouillon, and the black pepper to the vegetable mixture, stirring to combine.
- Add the beef mixture to a 2-quart casserole dish.
- Cover the casserole dish and bake until heated through, about 30-40 minutes.
- Sprinkle the beef mixture with the cheddar cheese and immediately cover the casserole dish.
- Let the casserole stand until the cheese melts, about 2-3 minutes.
- Serve.
