Ingredients

For the dip:

  • 1 tablespoon olive oil plus more, to taste, for greasing the dish
  • 1 pound ground beef
  • 1 1/2 cups enchilada sauce
  • 1 cup canned roasted corn kernels drained
  • 1 (4.5-ounce) can chopped green chiles
  • 1 cup Monterey Jack cheese divided
  • 1 cup cheddar cheese shredded, divided
  • kosher salt to taste
  • freshly ground black pepper to taste

Optional, for serving:

  • cilantro to taste, torn or chopped
  • green onions to taste, chopped
  • tortilla chips to taste

Directions

  • Preheat the oven to 400 degrees F.
  • Using the extra oil, lightly coat a 9x13-inch baking dish.
  • In a saucepan over medium-high heat, add 1 tablespoon of the remaining olive oil.
  • Add the ground beef to the hot oil and cook, while crumbling, until it is no longer pink, about 5-7 minutes.
  • Drain the excess fat from the saucepan.
  • Add the enchilada sauce, the corn, the chiles and their juices, 1/2 cup of the Monterey Jack cheese, and 1/2 cup of the cheddar cheese to the beef and stir to combine.
  • Season the beef mixture with the salt and the black pepper.
  • Add the beef mixture to the prepared baking dish and spread it out evenly.
  • Top the beef mixture with the remaining Monterey Jack cheese and the remaining cheddar cheese.
  • Bake until the beef mixture is bubbly around the edges, about 5 minutes.
  • Allow the dip to cool for 5 minutes.
  • Top with the cilantro and the green onions.
  • Serve with the tortilla chips.
