Ingredients
- 1 cup butter softened
- 2 1/4 cups all-purpose flour divided
- 2 cups white sugar
- 4 eggs
- 3 lemons juiced
Directions
- Preheat the oven to 350 degrees F.
- In a medium bowl, blend the butter, 2 cups flour, and 1/2 cup sugar.
- Press the butter mixture into the bottom of an un-greased 9x13-inch pan.
- Bake until firm and golden, about 15-20 minutes.
- In another bowl, whisk together the remaining sugar and the remaining flour.
- Whisk the eggs and lemon juice into the sugar/flour mixture.
- Pour the lemon juice mixture over the baked crust.
- Bake for 20 minutes.
- Transfer the lemon squares from the oven and allow them to cool in the pan; they should firm up.
- Cut into 2-inch squares and serve.
