Ingredients
- 4 large cloves garlic minced
- 2 teaspoons dried oregano
- 1 teaspoon sweet paprika
- 1 teaspoon fresh thyme leaves
- 2 tablespoons flat-leaf parsley finely chopped, plus more, to taste, for garnish
- 1/3 cup extra-virgin olive oil
- 1 lemon zested and juiced, plus 1 lemon, optional, to taste, halved then sliced, for garnish
- kosher salt to taste
- black pepper to taste
- 1 1/2-2 pounds chicken breasts boneless and skinless, can substitute thighs
- neutral oil to taste, for oiling the grill grates
Directions
- In a large mixing bowl, add the garlic, the oregano, the paprika, the thyme, 2 tablespoons of the parsley, the extra-virgin olive oil, the lemon zest, the lemon juice, the salt, and the pepper and whisk to combine.
- Taste the marinade and add more of the salt and the pepper, as needed.
- Add the chicken breasts to the marinade mixture and toss until they are well-coated.
- Cover the mixing bowl and refrigerate the chicken for at least 2 hours and up to overnight.
- Using the neutral oil, lightly oil the grill grates.
- Preheat the grill to medium heat.
- Add the marinated chicken breasts to the grill and cook, flipping them once, until the chicken breasts reach an internal temperature of about 160 degrees F, about 5 minutes per side.
- Transfer the chicken breasts to a plate and immediately tent them with foil.
- Let the chicken breasts rest under the foil until they come up to a safe eating temperature of 165 degrees F, about 5-10 minutes.
- Serve garnished with the lemon slices and the extra parsley.
