Ingredients
- 1 package muffin mix plus the ingredients called for on the package
- fresh or frozen blueberries to taste
- lemon zest to taste
- sparkling sugar to taste
Directions
- Preheat the oven to 425 degrees F.
- Line a standard muffin tin with paper liners, then coat the whole tin with nonstick spray.
- In a large bowl, prepare the muffin mix, according to the package directions. Carefully use your hands to combine.
- Mix the blueberries and the lemon zest into the muffin batter.
- Fill each of the muffin cups 3/4 of the way full with the muffin batter.
- Top the muffin batter with the sparkling sugar.
- Bake the muffins, according to the package directions. If the package instructions call for a baking temperature below 425 degrees F, reduce the heat after the first 4-5 minutes of baking time to the recommended temperature.
- Transfer the muffin tin to a wire rack to cool.
- Serve.
