Ingredients
- 16 ounces pasta such as rotini or fusilli
- 12 ounces bacon
- 2 small onions diced
- 2 cups frozen peas
- 1/2 cup grated parmesan
- 1/2 teaspoon salt
- 1/2 teaspoon freshly cracked black pepper
- 1/4 teaspoon crushed red pepper optional
Directions
- Bring a pot of salted water to a boil.
- Once boiling, add the pasta and continue to boil until the pasta is tender, about 7-10 minutes.
- Reserve 1/2 cup of the pasta water before draining the pasta.
- Add the bacon to a large skillet and cook over medium heat until it is brown and crispy.
- Transfer the cooked bacon to a paper-towel-lined plate. When it is cool enough to handle, crumble the bacon.
- Drain most of the bacon grease from the pan, leaving about 4 tablespoons.
- Add the onion to the remaining bacon grease in the skillet, and sauté until tender, about 5 minutes.
- Add the frozen peas and 1/2 cup of the reserved pasta water to the skillet.
- Continue to cook and stir until the peas are heated through.
- Add the pasta to the skillet, stir to combine, and then remove from the heat.
- Top the pasta with the parmesan, the salt, the pepper, the crushed red pepper, and the crumbled bacon. Stir to combine.
- Serve.
