Ingredients
- 1 pound bacon cut into 1-inch pieces
- 1/4 cup butter cubed
- 4 slices white bread crusts removed and cut into 1-inch cubes
- 1/2 cup mayonnaise
- 4 tablespoons basil minced
- 2 tablespoons red wine vinegar
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic minced
- 6 cups romaine lettuce chopped
- 1 1/2 cups grape tomatoes halved
Directions
- In a large skillet, cook the bacon over medium heat until crisp.
- Using a slotted spoon, place the bacon on paper towels to drain, reserving 2 tablespoons of the drippings.
- Set bacon and the reserved drippings aside.
- In another large skillet, melt the butter.
- Add the bread cubes to the butter and cook over medium heat until golden brown, about 4-5 minutes, stirring frequently.
- Using tongs, place the toasted bread cubes onto paper towels and allow them to cool.
- In a small mixing bowl, whisk the mayonnaise, basil, red wine vinegar, pepper, garlic, and reserved bacon drippings until a smooth salad dressing forms.
- In a large salad bowl, combine the romaine lettuce, grape tomatoes, and bacon.
- Drizzle the contents of the salad bowl with dressing and toss to coat well.
