Ingredients

  • 2 bananas ripe and smashed
  • 1/3 cup Greek yogurt
  • 1/3 cup butter melted, plus more, to taste, for greasing the dish
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • salt to taste
  • 1 1/2 cups all-purpose flour
  • 1/2 cup blueberries

Directions

  • Preheat the oven to 350 degrees F.
  • Using the extra butter, grease a 4x8-inch loaf pan, then line the pan with parchment paper.
  • Using the extra butter, grease the parchment paper.
  • In a large bowl, mix the bananas, the yogurt, and the remaining 1/3 cup of the butter using a wooden spoon or fork.
  • Add the sugar, the egg, and the vanilla and mix.
  • Sprinkle the baking soda and the salt over the batter and mix in.
  • Add the flour to the batter and mix just enough to blend, do not overmix.
  • Fold the blueberries into the batter until evenly distributed.
  • Pour the batter into the prepared pan.
  • Bake until a knife inserted in the center comes out clean, about 1 hour.
  • Cool the bread on a wire rack in the pan.
  • Transfer the bread from the pan and slice.
  • Serve.
