Ingredients

  • 1 pound ground pork sausage meat
  • 1 cup yellow onion diced
  • 8 eggs
  • 1/2 cup bacon crumbles
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 cups Fritos™ corn chips
  • 1 (1.25-ounce) packet Hollandaise sauce mix plus ingredients required on package directions
  • 2 cups mozzarella and cheddar cheese blend shredded

Directions

  • Preheat the oven to 400 degrees F.
  • Grease a 9x13-inch baking dish.
  • In a large saucepan over medium-high heat, add the sausage and the onion.
  • Crumble the sausage and cook until the onion is translucent and softened and the sausage is cooked through, about 5-7 minutes.
  • Reduce the heat to medium.
  • Crack the eggs into a medium mixing bowl, whisking them well.
  • Pour the beaten eggs into the saucepan with the sausage, stirring everything together.
  • Add the bacon, the salt, and the pepper to the pan, stirring everything together.
  • Cook, stirring occasionally, until the eggs are completely cooked, about 4 minutes.
  • Transfer the saucepan from the heat.
  • Prepare the Hollandaise sauce according to the package directions.
  • Add the corn chips to the prepared baking dish, spreading them out evenly.
  • Spoon the egg and sausage mixture over the corn chips, spreading it out evenly.
  • Pour the Hollandaise sauce over the egg mixture layer.
  • Sprinkle the shredded cheese on top of the Hollandaise sauce.
  • Bake the pie until the cheese on top is completely melted, about 12-15 minutes.
  • Serve.
