Ingredients
- 1 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup milk
- 3/4 cup ricotta cheese
- 2 large eggs
- 1 tablespoon lemon zest
- 1/4 cup lemon juice
- butter to taste
- maple or blueberry syrup to taste, for serving
Directions
- In a large bowl, add the flour, the sugar, the baking powder, the baking soda, and the salt and sift to combine.
- Add the milk, the ricotta cheese, the eggs, the lemon zest, and the lemon juice to the flour mixture and whisk to combine.
- Preheat a flat griddle over medium-high heat.
- Add the butter to the hot griddle and allow it to melt.
- With a ladle or measuring cup, scoop about 1/4 cup of the pancake batter onto the prepared griddle and cook until bubbles form, about 2-3 minutes.
- Flip the pancakes and cook until the bottom sides are golden-brown, about 2 minutes.
- Serve the pancakes warm with the maple syrup.
