Ingredients

  • 1 pint of strawberries
  • 1/2 cup sugar plus more to taste, divided
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract optional

Directions

  • Hull and wash the strawberries.
  • Chop the strawberries into 1/4-inch-thick pieces.
  • Toss with 1/2 of the sugar and allow the strawberries to release their juices, stirring only occasionally, for about 10 minutes.
  • Place 1/2 of the strawberries and all of the released juices into a blender and purée.
  • Pour the purée back into the bowl with the remaining strawberries.
  • Combine the cream, vanilla extract, and remaining sugar in a bowl.
  • Whip the cream mixture until the cream is stiff and holds peaks easily.
  • Fold the berries and cream together.
  • Serve immediately.
