Ingredients
- 8 cups fresh broccoli
- 1/2 cup butter
- 2 tablespoons all-purpose flour
- 1 small onion chopped
- 1 1/4 cups milk
- salt to taste
- pepper to taste
- 4 cups swiss cheese shredded
- 2 eggs beaten
Directions
- Preheat the oven to 325 degrees F.
- Place the broccoli in a steamer over 1 inch of boiling water, and cover.
- Cook until the broccoli is tender, but still firm, about 2 to 6 minutes. Drain and set aside.
- Melt the butter in a medium saucepan over medium heat on the stovetop.
- Add the flour and cook until bubbly.
- Stir in the onion.
- Gradually add the milk, stirring well as you do so.
- Bring to a boil and cook for 1 minute.
- Remove from the heat and season with salt and pepper.
- Stir in the cheese and eggs; mix well.
- Combine the mixture with the broccoli and transfer to a 9x13-inch casserole dish. Bake for 30 minutes.
- Serve warm!
