Ingredients
- 1/2 cup brown sugar packed
- 1/2 cup ketchup
- 1 1/2 pounds lean ground beef
- 2 large eggs
- 1 small onion chopped
- 3/4 cup milk
- 3/4 cup saltine crackers finely crushed
- 1 1/2 teaspoons salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground ginger
- mashed potatoes optional, to taste, cooked and warm
Directions
- Preheat the oven to 350 degrees F.
- Lightly grease a 5x9-inch loaf pan.
- Press the brown sugar into the bottom of the prepared loaf pan and spread the ketchup over the top.
- In a large bowl, combine the beef, the eggs, the onion, the milk, the crackers, the salt, the pepper, and the ginger and shape it into a loaf.
- Place the loaf on top of the ketchup layer.
- Bake the meatloaf until the juices are clear, about 1 hour.
- Serve with the mashed potatoes.
