Ingredients
For the loaf:
- 1 cup dry whole wheat breadcrumbs
- 2 celery ribs chopped
- 1 small onion chopped
- 2 large eggs lightly beaten
- 1/2 cup Buffalo wing sauce
- 3 cloves garlic minced
- 1 teaspoon pepper
- 1 cup blue cheese crumbled, divided
- 1 pound ground chicken
- 6 strips bacon
For the glaze:
- 1/4 cup Buffalo wing sauce
- 4 teaspoons prepared mustard
- 4 teaspoons honey
- celery optional, chopped, to taste
Directions
- Preheat the oven to 350 degrees F.
- Grease a 15x10x1-inch baking pan.
- In a large bowl, combine the breadcrumbs, the celery, the onion, the eggs, 1/2 cup of the Buffalo sauce, the garlic, and the pepper.
- Stir in 3/4 cup of the blue cheese.
- Add the chicken and mix lightly but thoroughly.
- Shape the meat mixture into an 8x4-inch loaf on the prepared baking sheet.
- Arrange the bacon over the top of the loaf.
- In a small bowl, mix the remaining Buffalo sauce, the mustard, and the honey.
- Spoon the glaze over the meat loaf.
- Bake until a thermometer inserted into the center reads 165 degrees F, about 45-50 minutes.
- Sprinkle the loaf with the remaining blue cheese and the extra celery.
- Let stand for 10 minutes before slicing.
- Serve.
