Ingredients
- 2 cups chicken cooked and shredded
- 3/4 cup barbecue sauce divided
- flour to taste, for dusting the work surface
- 1 (16-ounce) package refrigerated pizza dough divided into 2 equal portions
- 1 cup mozzarella cheese shredded
- 1/4 medium red onion thinly sliced
- 1/3 cup Gouda shredded
- crushed red pepper flakes optional, to taste
- 2 tablespoons cilantro freshly chopped, for garnish
Directions
- Preheat the oven to 500 degrees F.
- Line two large baking sheets with parchment paper.
- Grease the parchment paper with cooking spray.
- In a medium bowl, add the chicken and 1/4 cup of the barbecue sauce and stir to combine.
- Using the flour, lightly dust a work surface.
- Turn the pizza dough portions out onto the prepared work surface and roll them out to create two large circles.
- Slide 1 of the dough circles onto each of the prepared baking sheets.
- Top each of the dough circles evenly with the remaining barbecue sauce. Spread the sauce out evenly, leaving a 1-inch border around the edges.
- Evenly add the chicken mixture to each of the dough circles, spreading it out and leaving a 1-inch border around the edges.
- Add an even layer of the mozzarella to the dough circles, leaving a 1-inch border around the edges.
- Evenly add the red onions and the Gouda to the dough circles, leaving a 1-inch border around the edges.
- Sprinkle the red pepper flakes over the Gouda layers.
- Bake until the cheese is melted and the dough is cooked through, about 20-25 minutes.
- Serve garnished with the cilantro.
