Ingredients
- butter to taste
- 1 pound Italian sausage meat casings removed
- 1 cup onions diced
- 1 (10.5-ounce) can condensed cream of mushroom soup
- 1/2 cup milk
- 1/2 cup sour cream
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon Italian seasoning
- 2 pounds russet potatoes thinly sliced
- 2 cups mozzarella and cheddar cheese blend shredded
- 1/3 cup green onions chopped
Directions
- Preheat the oven to 350 degrees F.
- Coat a 9x13-inch baking dish with cooking spray.
- In a large skillet over medium heat, melt the butter.
- Add the sausage and the onions to the melted butter and cook, while crumbling, until the sausage and the onions are browned, about 5-7 minutes.
- Transfer the skillet from the heat.
- In a mixing bowl, add the cream of mushroom soup, the milk, the sour cream, the salt, the pepper, and the Italian seasoning and whisk until well combined.
- Evenly place 1/2 of the potatoes in the bottom of the prepared baking dish.
- Spread 1/2 of the soup mixture over the potatoes.
- Sprinkle 1/2 of the sausage mixture over the soup mixture.
- Sprinkle 1 cup of the cheese over the sausage mixture.
- Repeat the layers once, ending with the remaining cheese.
- Bake, covered with foil, for 50 minutes.
- Carefully discard the foil from the dish and bake until the cheese is melted and golden, about 15 minutes.
- Transfer the casserole from the oven and allow it to stand for about 5 minutes.
- Sprinkle the chopped green onions on top and serve.
